Tasting Note: A beautiful example of Southern French grape varieties; rich in colour with ripe, red fruit, well-married tannins and herbaceous, spicy flavours full of southern warmth.
Food Matching: Roast leg of lamb with mustard and red wine sauce, steak with ham, provone and mushroom sauce or pan-seared filet mignon with roasted potatoes and Merlot sauce will make for a splendid combination.
Vineyard: Sourced from the single vineyard 'Bussiere' which is a mix of galet stones, sands and clay. The vines yield a respectably low 45hl/ha and are hand harvested. Ageing is in 30% new barriques for 12 months.
