Tasting Note: Nose: Brown sugar and cherry pie with a touch of
roasted coffee beans.
Palate: Viscous and rich. Full of dark stone fruits, chocolate
and a hint of roasted almonds.
Finish: Peppery oak spice accompanied by notes of
Production Method: Cotswolds Sherry Cask expression begins with the new make spirit which is already
incredibly smooth and fruity thanks to the pair of yeasts we use, the long 90-hour
fermentation and the tight heart cut on the spirit still.
We dilute it to 63.5% ABV before filling a combination of casks seasoned with Oloroso and
Pedro Ximénez for full term maturation.
