Tasting Note: Quintessentially Pinot Noir nose, with aromatic crushed strawberries and a toasty note, with a beautiful leafy, earthy complexity. Then the palate is dry with a Burgundian silkiness to the tannins. Long finish, very balanced and elegant.
Food Matching: Light red meat dishes and game. Guinea fowl would be perfect. Wild mushrooms would also work beautifully.
Vineyard: The name 'Kalkmergel' refers to the soil type on which the vines are grown: a limestone-marl blend, reminiscent of the finest Pinot Noir soils of Burgundy. Hand-picked from 5-30 year old vines.
Vinification: The juice is macerated with the skins for 3 days at 2°C before fermentation in stainless steel tanks for 10 days at a temperature of 22°C. The wine is matured for 17 months in 50% 2-year-old French oak barriques and 50% 3-year-old French barriques.
