Vineyard: Produced after the recently rediscovered ‘Centennial Malbec of San Rosendo’, this wine represents the depths of our convictions. We believe in dry land wines, deep roots and vines adapted to their environment.
Vines of Malbec are more than 100 years old and were initially hidden and mixed with Pais grapes.
Vinification: Handpicked, the grapes were de-stemmed in an improved sieve, by hand, directly over an open tank. After completed alcoholic fermentation, the wine is moved to new French oak barrels for the malolactic fermentation.
After MLF, the wines were separated into two identical batches. There was music composed for this particular wine and vintage.
