Vineyard: Salento is renowned for its Mediterranean climate with its prevailing winds, cool nights, very low rainfall and for the moderating influence of the sea. Due to the winds there are also extreme differences between day and night temperatures which result in a slow ripening of the grapes, helping them develop exceptional aroma and flavour compounds.
Vinification: The must is fermented on the skins at a controlled temperature for about five days. After alcoholic and malolactic fermentation have taken place in stainless steel tanks, the wine is matured in large oak casks.␉␉␉␉␉␉␉
