Tasting Note: Refreshing, light red from northern Spain, packed with plums, blueberries, cherries and a soft summer hint of raspberries.
Food Matching: Stews. Iberian Pork, including Iberian ham. Barbecues. Octopus (Pulpo a la Gallega).
Vineyard: The grapes are carefully selected in the vineyard. Temperature is controlled throughout to ensure freshness of fruit.
Vinification: Hand Harvest into 18 kg plastic-crates followed by sorting table. Skin contact maceration at low temperature. Alcoholic fermentation in stainless steel under controlled temperature. Salvage yeast. Periodical Pump over and punch down is made. 4 months aging in Barrel. Wine rounds until bottling.
