Tasting Note: This delightful white from the Basque Country is light, aromatic and delicately citrussy, fragrant with herbs and flavoured with pears.
Food Matching: It is the ideal accompaniment for salty seafood such as salted anchovies grilled fish and tuna in oil.
Vineyard: Sourced from 3 hectares of vines in Getaria, the yields are carefully controlled in order extract maximum intensity of aromas from the Hondarribi Zuri grape.
Vinification: Fermentation takes place in French barrel all from the first press at a temperature of 12 ºC. 10% of the wine then undergoes malolactic to slightly reduce the acidity and provide more weight and balance on the palate. The Txakoli is then left in contact with the lees for 6 months to add volume and texture.
Awards and Press News: Txakoli Tasting - Sarah Jane Evans MW
100% Hondarribi Zuri spends six months on its lees in stainless steel. The acidity builds slowly but firmly on the fine, creamy, tropical fruit palate. It finishes with a lick of sea salt. Young, energetic, likeable. Drink 2018-2020.
Decanter Magazine, March 2018
Staying with the bright and breezy theme, but veering into unchartered waters, the little-known Txakolina Adur would be a worthy addition to your summer wine collection. From the wild and rugged hills of the Basque country, this dry white is as pinpoint-sharp as a laser beam, with mouthwatering green apple and lemon tones, and a lipsmackingly zesty, bone dry finish - and crying out for grilled sardines, the freshest of prawns, or calamari.
