Tasting Note: Cherry red with salmon pink highlights and a finely textured, consistent mousse. The nose is fresh, fragrant and inviting, offering light red fruit aromas and hints of biscuity yeast. On the palate the wine is medium bodied and dry, but possessed of a ripe cranberry fruit intensity that balances the bubbles and the crisp finish beautifully.
Food Matching: A great way to start the meal, either by itself or with canapees. Divine with tuna sashimi or swordfish steaks with a mango & papaya salsa, will also compliment spicy Eastern dishes.

Vineyard: The Pinot Nero grapes are sourced from the higher altitude vineyard areas of Valdobbiadene where they benefit from the cooling influence of the mountain winds and the temperature drop overnight.
Vinification: Hand picked, then destemmed and crushed at the winery, the juice begins fermentation in contact with the skins and is then removed after a few hours, leaving it lightly infused with the blush colour. The second fermentation takes place in sealed steel tanks at a controlled pressure and temperature, increasing the length of time taken to achieve the sparkle which creates a higher quality finished wine. There is no oak used in the making of this wine.
