Tasting Note: The apperance is bright, clean and with golden reflections.
Citric and fruity (green apple) nose, with an important balsamic note (aromatic herbs…).
The varietal aromas are perfectly balanced with the lees and bakery notes created during the aging.
On the palate, the creaminess from the lees is prominent and it has a living bubble which is very well integrated, providing it with freshness and persistence.
Unique Selling Point: An amazing sparkling made from 100% Albariño grape from a selected early harvest to guarantee its freshness and wonderful balance. The varietal aromas are perfectly aligned with thw bakery notes from the aging on lees.
Vineyard: To produce the Sparkling Martín Códax, the winery went for a selected harvest at the beginning of September, ten days before the conventional one to guarantee its freshness and balance. Classification: Brut, 10 gr/l of residual sugar.
Vinification: The wine has been kept on its lees for three months before its production using the traditional champanoise method. The tirage was done in October. The secondary fermentation in bottle has been done slowly and controlling the temperature in order to obtain a smaller bubble size perfectly integrated into the wine. It aged on lees for thirty months before the disgorgement date, providing the wine with more aromatic complexity which favoured again the bubble integration.
