Vinification
Grapes are harvested at night to preserve freshness and prevent oxidation. They're gently pressed at 7–8°C, and the must is clarified. Only the best juices ferment in stainless steel at low temperatures. The wine then ages on fine lees for 4 months with regular bâtonnage.

Fantastic wine for drinking on its own on a sunny afternoon, or excellent partnered with tomato salad, light meat and fish dishes.
