Vineyard
The Premier Cru Vaillons is one of the largest in surface area. The soils are from the Upper Jurassic period (Kimmeridgean only for all our plots). Our plots are located on hillsides facing South-East.

Vinification
Soft and slow pressing to extract the best juices. Alcoholic fermentation with natural yeasts to respect the personality of each terroir. Malolactic fermentation 100%. Fermentation and ageing take place in neutral oak barrels (already used 2 to 9 years) for 25% of the volume, and in stainless steel tanks for the remaining 75%.
