Tasting note
Silky Amarone, the rich, textured dry red of the Veneto, like a savoury port, with flavours of prunes and Morello cherries and a heady bouquet of nuts, tobacco, dried flowers and sweet spices.
Viticulture
Blend: 80% Corvina Veronese, 20% Rondinella. Vertical-trellised, Guyot-trained vines, 5000 vines/ha. From Tenuta Novare in Valpolicella Classica's heart, Arbizzano di Negrar. Calcareous-marl soils, solely for Amarone.
Vinification
Bunch selection precedes taking the grapes to drying rooms. Bamboo racks host them for around 120 days, enriching concentration and fostering a rich aromatic profile. Destemming and crushing in january. A 20-day maceration, followed by gentle fermentation in concrete vats. Ageingin Slavonian oak barrels of 60 hl average capacity for about six years
