Tasting note
A nose marked by fresh fruit, cherries, fruits of the forest, wild strawberries and complex elegant notes of white pepper typical of Corvina. The wine is interesting and bright on the palate, displaying persistence and personality.
Viticulture
Terraced vineyard above Tenuta Novare mines, southwest exposure. Valpolicella Classica's Tenuta Novare, Le Miniere vineyard is 4.01ha. Calcareous Eocene soil with Scaglia rossa, 1m deep, mainly reddish clay. Mined iron and manganese.
Vinification
The wine is obtained from carefully hand-picked bunches grown in a vineyard dedicated to exclusively producing this wine. After fermentation, the wine finds balance firstly in concrete vats and then in the bottle. After a year, it is ready to offer up the precise and identifying expression of Valpolicella Classico.
Food Match
It is excellent with medium-flavoured pasta dishes, grilled, roast meat and medium-matured cheese.
