Tasting note
A wine of dense-packed black fruit, liquorice, peaty earth, damp forest soil and rich, moist, sticky dark chocolate brownie. This is a resonant chord, of high treble and deep bass, with great amplitude and vocal range, and utter harmony. Velvet texture and junipery complexity, all underpinned by an umami richness.
Viticulture
Araucana Vineyard. 5 hectares in total. Sandy loam soil of alluvial, aeolian, and volcanic origin. Composition with a high content of calcium carbonate. Vertical shoot positioning (VSP) / high trellis. 5000 plants per hectare. Planted in the year 2001. Transitioning to organic.
Vinification
Cold maceration for 48 hours. Spontaneous fermentation in open-top concrete tanks for approximately 12 days at 28-30°C. Manual punch-downs, gentle pump-overs, and délestage. Complete malolactic fermentation. Aging for 12 months in French oak (225-liter barrels) with 30% new barrels, 30% second-use, and 40% third-use. Bottle aging for 12+ months.
Food Match
Steak, pork, and lamb, as well as fattier fish like salmon and poultry with dark meat. Game meat—like bison, ostrich, and venison—are also a safe bet. In addition to meat pairings, consider foods with richer sauces or more vibrant flavors.
