Tasting note
Red fruits and cherries stand out on the nose, with a subtle balsamic, almost minty touch, aromatic herbs like thyme and rosemary, and primary fruit aromas. On the palate, it surprises with its silky structure, smooth tannins, and balanced acidity. A long-lasting wine with mature red fruits, inviting an immediate second sip.
Viticulture
Organic. Limestone shallow, rocky soil, pebbles. Low bushes planted in 1956, no irrigation.
Vinification
Spring yields good flowering, followed by hot, dry Summer. Grapes arrive in September, undergo selection, then ferment in stainless steel. After fermentation, aged 10 months in ancestral 4,500L clay jars. Bottled and rested for 36 months. Natural clarification. Possible sediment over time, no impact on wine quality
Food Match
This is a silky red wine with a remarkable acidity that matches perfectly well both with white and red meats or fatty fishes such as tuna and cod. It is also good with pasta and meat sauce dishes.
