Tasting note
A charming Chianti full of fruit and spice, juicy and approachable, with cherries offset by an exotic perfume of vanilla and cinnamon.
Viticulture
The production area is located within the hilly zones of Vinci, Cerreto Guidi and the surrounding areas in Tuscany. The wine is made from 85% Sangiovese grapes with 10% Merlot grapes and 5% other varietals included for additional complexity.
Vinification
The grapes underwent gentle crushing and pressing, followed by maceration on skins for 8-10 days. Fermentation occurred at 27-28°C with regular, gentle pump-overs, enhancing colour and tannin extraction for a well-structured wine. After fermentation, malolactic fermentation took place, followed by 10 months of aging in French and American oak barrels.
Food Match
Ideal with roast pheasant with wild mushroom, potato & bacon ragout or braised veal with red cabbage and dauphinoise potatoes.
