Tasting note
Medium color with garnet hue. Aromas of rose, red berries, cola, and subtle earthiness. Palate is between rosé and red, medium-bodied, soft, and refreshing acidity. Red fruits upfront, followed by earthy, cola, and peppery notes. A sweet-savory balance with Grenache and Mourvèdre.
Viticulture
Crafted from old Grenache (53%) and Mourvedre (39%) vines (20-70 yrs) in various sub-regions. A touch of Kerner, Gewurztraminer, and Riesling from Eden Valley. Grenache for bright red fruits and spice, Mourvedre for savoury notes. White grapes add freshness. Hand-pruned vines with ideal canopies for fruit protection.
Vinification
Grenache, picked early for freshness, and Mouvedrè, for floral notes, fermented in open stainless tanks. Post-ferment, 4 months on lees in stainless steel added texture while preserving freshness. The blend: 78% Red, 14% Rosè, 8% White, with 15% wholebunch. Minimal SO2, no fining - vegan and vegetarian friendly!
Food Match
It's a versatile wine which pairs with just about anything. Equally delicious with fine cheeses, charcuterie to burgers. Try with mushroom or tofu dishes, or lamb, goat and game meats.
