Viticulture
The Riesling vines were planted in 1973 on an ideal east-facing aspect that benefits from the prevailing breeze that helps to keep this vineyard fresh and disease free. The vineyard is planted in low-nutrient well-draining soils largely composed of quartz gravel. Vineyard GPS coordinates: 34°42'06.5"S 139°05'03.4"E
Vinification
Machine harvested for a few hours of intentional skin contact for phenolic body. Cold fermented in controlled inox fermenter with a combination of indigenous & selected yeasts to develop and protect delicate aromas. No fining agents used with minimal SO2 added before bottling.

A versatile wine to try with chicken pad thai or a fish-finger sandwich with lashings of tartare sauce.
