Viticulture
Michael Noack's vineyard, near Springton in southern Eden Valley, features Riesling vines planted in 1973 on an east-facing slope. This location benefits from a cooling breeze, keeping the vineyard fresh and disease-free. The vines grow in low-nutrient, well-draining quartz gravel soils. GPS: 34°42'06.5"S 139°05'03.4"E
Vinification
Machine harvested for a few hours of intentional skin contact to build phenolic body. Cold fermented in a temperature controlled inox fermenter using a combination of indigenous and selected yeasts to develop and protect delicate aromas. No fining agents are used throughout the winemaking process and only minimal SO2 is added prior to bottling.
