Delicate, mineral Riesling from South Australia, exuding jasmine and honeysuckle, followed by a mouthful of mandarin and Pink Lady apple.
Viticulture
This Riesling blends three old vineyards, two dry-grown, aged 22 to 60+ years. Spanning Moculta, Flaxman Valley, and Springton in the Eden Valley, it incorporates key geological features. Dry-grown and organically managed, the diversity in ripeness levels and sun exposure at picking yields a complex wine with a wonderful aging pattern.
Vinification
Hand-picked grapes undergo a 9-hour whole-bunch press for phenolic body. Cold fermentation in a controlled inox fermenter, with indigenous and selected yeasts, preserves delicate aromas. Chilled before sugar dryness (4.4g/L residual sugar). No fining for style, minimal SO2 added before bottling.
Food Match
The purity and acidity in this wine would pair well with salads including fresh fennel or raw courgette. Seafood stirfries would also be a perfect accompaniment.
