Certified sustainable under the Haut Valeur Environmentale Level 3 (HVE3) and VDC (Sustainble Viticulture in Champagne) programmes. Working towards B Corp certification.
Vinification
Early-picked Meunier, fully mature Pinot Noir and Chardonnay. A blend of 68 different terroirs with 40% of reserve wine. Alcoholic fermentation in both stainless steel and 35hl wooden casks. Undergoes full malolactic fermention. 18% red wine in the blend. Minimum 3 years ageing on lees.
