Tasting note
Citrussy sparkling wine, like a cool breeze from the sea, with notes of apple and lemon which come to land amongst an array of creamy, complex flavours, full of nuts, bread and brioche.
Vinification
Chardonnay and Pinot Noir grapes, hand-picked and gently pressed for free-run juice. Primary fermentation in stainless steel tanks, oak vats, and French oak barriques with malolactic fermentation. Aged on lees for 8 months before blending and tirage. Two years of bottle maturation on lees before disgorgement and release.
Food Match
Pelorus NV is a crisp aperitif style sparkling wine and is suitable to serve with light canapés. A winery favourite is crisp Parmesan wafers.
