Tasting note
A nostalgic bouquet of wild blackberries, mulberries, and raspberries with woody spice and brambly undertones. On the palate, sweet berry fruits mingle with intricate layers, revealing earthiness and hints of rich beef reduction, leather, and walnut. Chewy tannins round out this generous, intricate wine. Ideal for pairing with various hearty, meaty dishes.
Viticulture
The season began well with average winter rainfall, Summer conditions were significantly warmer than average with two heatwaves through January testing the limits of the vines. Following the heatwave was rain and cool weather, which helped slow down ripening, and allowed flavour development to catch up to sugar ripeness.
Vinification
Small batches of grapes are gently crushed and then transferred to open fermenters. Foot treading is undertaken two thirds of the way through fermentation, the wine is basket pressed and then aged in French oak for up to 18 months.
