Tasting note
Complex, exotic white wine from South Australia's McLaren Vale, a cascade of peaches, honeydew melon, papaya and a tangy hit of pickled ginger, below a cloud of fragrant white blossom.
Viticulture
Ideal season with robust winter and spring rains. Timely bud burst, in early spring was cool, stalling shoot growth. Late flowering led to a delayed harvest and gradual ripening. Minimal disease due to summer rains stopping in mid-January. Dry conditions from February to April, with mild days and cool nights. Slightly warmer April aided final fruit ripening.
Vinification
Small batches of grapes are gently crushed and transferred to stainless steel basket presses. Fermentation is long and moderately cool to retain fresh fruit characters, and is conducted in stainless steel tanks. Only free-run juice is used for the final wine, with no malolactic fermentation.
Food Match
Antipasti, meaty white fish.
