Earthy, spicy Shiraz from McLaren Vale in South Australia, full of black plums, liquorice and black pepper, with a peaty underlayer of mushroom, pipe tobacco and charcuterie.
Viticulture
Average winter rainfall, Summer was significantly warmer than average with two heatwaves through January testing the limits of the vines. Following the heatwave was rain and cool weather, which helped slow down ripening, and allowed flavour development to catch up to sugar ripeness.
Vinification
Crafted to Perfection: Small grape batches gently crushed, remain separate. Foot treading mid-fermentation. Basket pressed, aged in French and American oak on lees, no racking until final blend. Unfiltered, unfined. Pure and unadulterated excellence.
