Tasting note
Luscious, mulberry-filled Cabernet Sauvignon from South Australia, the rich fruit leavened with mint, violet and blackcurrant leaf on the nose.
Viticulture
A wet summer and winter set the vines up perfectly for the 2012 vintage. Drier spring and summer led to lower yields. A heat burst before veraison ensured deep colour, small berries, and strong tannins. The resulting red wines are dark, solid, and well-structured, with notable depth and robustness.
Vinification
The grapes used in this wine are mostly from very old bush vines, and underwent gentle crushing, traditional open tank fermentation, basket pressing and oak maturation prior to bottling.
