Tasting note
Fruity, moreish Rhône red, full of raspberries and cherries, with chocolate and more raspberries in the mouth.
Viticulture
The beautiful Boudalles vineyard on the slopes of the Mont Ventoux near Carpentras supplies the grapes for this wine. Soils are sandy clay and very well drained.
Vinification
After each of the varieties is separately hand-picked, the grapes are de-stalked followed by 8 days of fermentation at 26C with daily pumping over and delestages. Six months of ageing in stainless steel follow, before bottling and release.
Food Match
This is a wine for consuming relatively young, with lighter foods like charcuterie and salads. If possible, drink it outdoors!
