Tasting note
Glorious red Châteauneuf-du-Pape like bottled summer, warming the air with the scent of currants, chocolate and Provençal herbs and warming the tongue with liquorice and more herbs.
Viticulture
Sourced from hand harvested, very old Grenache vines planted in the single vineyard 'Chaupin' which was planted in 1912 on sand and clay soils. The yields are a low 30-32 hl /ha and the grapes are picked and sorted by hand with partial destalking (80%).
Vinification
Maceration is for 21 days with a manual pumping over every 24hrs, oak ageing is for 12 months, 70% in large old barrels and 20% in 1/4 new barriques.
Food Match
Pasta with chicken, sun-dried tomatoes, gorgonzola and pine nuts, roast turkey with apples, onions, fried sage leaves, and apple cider gravy or grilled lamb chops with spicy mango sauce.
