Viticulture
Franck Massard, once UK's top sommelier, transitioned to winemaking after training with the Torres family. In Priorat since 2004, he's passionate about vineyard balance, employing organic viticulture and nurturing biodiversity. Parcel in Poboleda, 550m altitude, 40-year-old vines on licorella soils, low yields (1 kg per vine).
Vinification
Alcoholic and malolactic fermentation in stainless steel deposits. Ageing on 500 litre French oak barrels for 18 months.
Food Match
Roasted deer, steak tartar, kobe wagyu, pasta alla puttanesca, foie and truffle risotto and dark chocolate.
