Vinification
Grapes are carefully selected for optimal flavor and acidity, harvested in the morning, then crushed and fermented. A portion ages in new French oak barrels, while the rest in older barrels. Regular stirring enhances aging, and full malolactic fermentation creates a smooth, buttery texture. Finally, the wine is gently racked for fining and stabilization.
