Vinification
From the south-facing Ripe al Convento vineyard, 450m ABS, Sangiovese grapes thrive in schist-based Galestro soil. Handpicked, sorted twice, fermented in stainless steel tanks with controlled temperature. Ageing in wooden containers enhances stability, complexity, aromas, and structure. After 6 years, plus bottle ageing, the wine emerges market-ready
