Tasting note

A cuvée of Chardonnay, Chenin Blanc and Pinot Noir, this is a pretty, pale pink in colour, and has an utterly pure, fresh raspberry aroma. With a soft, creamy texture, it is irresistibly easy to enjoy. Very, very delicious.

Certified TERRA VITIS and in conversion to organic since 2020.

Clay and limestone soils.

Altitude vineyards on the foothills of the Pyrenees.

Yields of less than 50hl/ha

Vinification

Limoux enjoys a cool climate, due to its location in the Pyrenean foothills, and is therefore sutable for quality sparkling wine production. Chardonnay, Chenin and Pinot Noir grapes are harvested by hand, and pressed gently (at less than 1.2 bar). Bottle-aged on lees for 30 months, with final 'dosage' added from a solera of reserve wines.

Food Match

Ideal as a celebration wine, with Asian food or even with a strawberry cake.
