Vinification
Hand-harvested grapes, whole bunch pressed for top-quality juice. 15% barrel-fermented in old white Burgundy barrels, partial malolactic fermentation to soften acidity. 37% reserve wines added for signature style. Aged 4 years on lees, disgorged with 3 g/L dosage.
