Tasting note
A very delicate pale pink sparkling rosé from Hampshire. Bright red fruit, strawberries and raspberries with a note of pomegranate on the nose. Pink grapefruit on the palate balanced by a touch of sweet marshmallow. Slight earthy texture, sweet, fresh hay with a creaminess from
the oak element.
Viticulture
In 2019, a sunny start and record-hot Easter led to a warm, wet summer, increasing disease pressure. Despite being dubbed the 'harvest the rain didn't stop,' the vineyard team's excellence yielded clean, healthy grapes. Blending highlighted parcels perfect for a vibrant Rosé with two years on lees, showcasing red fruit character. - Emma Rice, Head Winemaker
Vinification
Handpicked Pinot Noir and Pinot Meunier undergo gentle whole-bunch pressing. About 10% ferments in 4-5-year-old Burgundy barrels, imparting texture. Partial malolactic fermentation softens acidity. After 7 months, tirage introduces 3% Pinot Précoce for color and body. Second fermentation in bottle, 24 months on lees before disgorging.
