Tasting note
Old vine Pinot Noir from the far south of South America, full of cherry and walnut, with a wisp of smoke curling into the nostrils.
Viticulture
Vineyards are located at Finca Los Borregos. Own vineyards dating from 1969 located in General Roca, Alto Valle de Río Negro, Patagonia.
Harvest date is from the end of March to the first week of April. Carefully harvested by hand and immediately sent to the winery, just 1km from the vineyard.
Vinification
Grapes are received in small containers, whole bunches selected, and destemmed. After 48-72 hours of cold maceration, fermentation occurs at 23-25°C in 9000L cement tanks for 15 days. Malolactic fermentation and aging follow in second-use French and Eastern European oak for 10 months. After bottling, the wine ages 6 months before sale.
