Tasting note
Deep plum, intricate mocha-chocolate, spicy fruit, subtle oak & anise hints. Nose: concentrated fruit, matured depth. Palate: Rounded, soft, rich; fine tannins. Flavours: fruity spice, coffee, chocolate, blackberry. A limited Lord Botham OBE selection.
Viticulture
Grown in mature vineyards located in the north western Barossa Valley where the soils are distinctly rich in iron, culminating in grapes of particularly dense colour and supportive tannin. Typical single wire, Barossan Sprawl trellising. Low vigour canopies and low yielding vines combined with the mild south australian climate allow for minimal inputs.
Vinification
Destemmed to 5 and 10 tonne open fermenters for a 7 day fermentation at around 24 degrees celcius. Pressed using pneumatic slotted screen press and aged in 30% new tight grained french oak for approximately 18 months
