Vinification
Manual night harvests in crates of 18kg and transport to the ultra sleek hi-tech winery in Basbina in temperature-controlled trucks. Gentle crushing and de-stalking. Temperature-controlled fermentation in stainless steel. French oak for 12 months, 60% new and 40% used.
