Vinification
Severe disbudding to control the yield. Hand picking and then a strict sorting in the cellar to keep only the best grapes. Destemming 100%. Cold pre-fermentation maceration for a few days. Fermentation with natural yeasts with daily pumping over for 10 to 15 days. After devatting, the wine is aged in oak barrels (10% new only)
