Wonderfully aromatic Meursault, a creamy palate with hazelnut butter, yellow plum and gingerbread complemented by floral notes of linden, chamomile and hawthorn and a dollop of honey.
Viticulture
South of Beaune lies the renowned Côte des Blancs, boasting diverse soils from deep and colorful to rocky. Plantation density of 10,000 stocks/ha extracts terroir nuances, yielding 49hl/ha purposely low to limit production. Meursault, among Burgundy's oldest villages, dates back to Neolithic times, settled by Gauls and Romans.
Vinification
Pressing is very slow so as to respect fruit with only the free run juice being retained. No yeasts or enzymes are used. The wine goes directly into barrels after "débourbage" (decanting of white wine to reduce sediment).
Ageing in barrels (25% in new oak) for 12 months.
