Viticulture
This vineyard lies alongside a renowned village south of Beaune on clay and limestone soil. At 10,000 vines/ha, it maximises terroir expression with Guyot pruning. Yield restricted to 44 hl/ha to highlight terroir nuances. A history dating back over 2,000 years, the Gauls first cultivated Pinot Noir here, possibly naming it after Pomona, a Celtic goddess.
Vinification
Maceration and vinification take 2-3 weeks using indigenous yeasts and controlled temperatures. Joseph Drouhin carefully extracts colour and substance with finesse, preserving the wine's character. Daily 'pigeage' and 'remontage' during fermentation, followed by vertical pressing to separate juices. Aged 14-18 months in barrels, including 20% new oak.
Food Match
Charcuterie, ham and other cold meats make a great match. As do Patés and terrines or classic French dishes, goat cheese or grilled asparagus.
