Tasting note
Dark ruby in colour. On the nose it offers aromas of black pepper, blackberry, cassis, coffee, floral notes, tobacco and vanilla. Full-bodied, complex, dry, balanced acidity, strong oak impression, fairly tannic, with a long finish.
Vinification
Grapes harvested, vinified in early October. 7-8 day maceration, fermentation in temp-controlled tanks. Malolactic, fining in new French barriques for 20-22 months with periodic racking. 3 months in steel tanks, unfiltered, settled 12 months in bottle before release
Food Match
Well suited to complex fine dishes where red meats are the focus of the dish. Also suited to seasoned cheese and truffles.
