Vinification
Wine matures in separate barriques till June after harvest. Blending precedes final 18-20 months' ageing in new French oak barriques. Steel tank stage precedes unfiltered bottling. Post-bottling, 3 months' thermo-conditioning. Nebbiolo thrives on premium hillside exposures. Calcareous marls, like Gallina in Nieve, yield exceptional Nebbiolo and Barbera
Food Match
Well suited to complex fine dishes where red meats are the focus of the dish. Also suited to seasoned cheese and truffles.
