Viticulture
This famous cuvee is made with nearly a dozen different crus, most of them grands crus, mainly coning from the South and North parts of the Montagne de Reims,including Côte de Bouzy.
Vinification
Upon winery arrival, grapes undergo gentle pressing. The initial pressing yields premium must. Blending creates distinct "cuvées" for the House's champagnes, ensuring consistent style by combining wines from diverse harvests. After winter bottling, still wine transforms to sparkling through a sugar-yeast mixture's gradual action added just before bottling.
Food Match
Makes a wonderful summer aperitif, it is also excellent with sushi or fruity summer puddings.
