Viticulture
Made with 100% Pinot Noir from 10 different crus located mainly in the South and North areas of the Montagne de Reims – including the famous Côte de Bouzy – notably from the finest crus of Ambonnay, Bouzy, Louvois and Tours-sur-Marne.
Vinification
Upon winery arrival, grapes undergo gentle pressing. The initial pressing yields premium must. Blending creates distinct "cuvées" for the House's champagnes, ensuring consistent style by combining wines from diverse harvests. After winter bottling, still wine transforms to sparkling through a sugar-yeast mixture's gradual action added just before bottling.
Food Match
Its aromatic depth makes it ideal for pairing with marinated raw fish, grilled prawns, exotic dishes, Parma ham and red fruit desserts. Those who are more daring will try it with Asian or Indian cuisine.
