Viticulture

Vinification

The grapes are harvested early in the morning. After destemming and gentle pressing, the premium juice is slowly extracted. During fermentation, the must is protected with CO2 to prevent oxidation. Fermentation occurs at 16-18°C in stainless steel tanks. The wine ages on fine lees for 4 months, enhancing aromas and creating a creamy texture before bottling.
