Traditional destemming followed by 48-hour cold soak enhances Cabernet extraction. Fermentation temps at 88-92°F develop rich fruit notes and full mouthfeel. French and American barrel aging add mocha and caramel layers. Petite Sirah and Merlot augment roundness and depth.
