Viticulture
The vines are grown in sandy soils using sustainable agriculture. The grapes, all Gamay, are harvested by hand.
Vinification
Carbonique maceration is the key to Beaujolais wines' success. The wines are fermented, with only the skins, cracked, as opposed to crushed or pressed. Through this type of fermentation the Gamay grapes true, delicate flavours perform. Once the short fermentation is complete the wines are racked and filtered prior to a short rest in the bottle
