Viticulture
The underlying soil is made of marly limestones and marl from the Middle and Upper Jurassic period. The topsoil is brown soils mixed with pebbles and gravel from hard limestone.
Vinification
Harvests are manual and after sorting on the vine and in the vat room, destemming depending on the appellation and vintage, maturing is carried out in 228-litre barrels including a variable proportion of new barrels according to the appellation, and bottling when the moon is favourable.Filtration is very light.

Perfect with salad nicoise, mushroom risotto or light chicken dishes.
