Tasting note
Superb Sauvignon Blanc, herbaceous without being grassy and citrus but never sharp; lemon blossom and herbs float above ripe tropical fruit, with a particular tang of passion fruit.
Viticulture
2019 saw an early, trouble-free harvest due to dry Summer. Spread-out ripening, loose bunches from wet flowering, faster berry ripening in hot, dry summer. Optimal maturity, fresh acidity for fruit concentration. Harvest concluded on April 13th.
Vinification
Night-harvested grapes chilled, crushed, and settled for 72 hours. Clear juice racked into steel vessels. Specialist yeast used; some natural fermentation for texture. Extended, cool fermentation for pure Marlborough Sauvignon Blanc flavours. Brief lees time, stabilized, filtered, then bottled.
Food Match
Great to pair with seafood, white meats, asian fusion, or simply enjoy on its own!
