Viticulture
Based in Reims, Mumm Cordon Rouge is selected from over 300 base wines and aged for a minimum of 20 months in the Maison's cellar prior to release. There is a light dosage of 8 grams per litre. The Mumm style is led by the high proportioin of Pinot Noir in the blend which gives a light and fresh style.
Vinification
Each cru's wines blended with 10-20% reserve wines from G.H. MUMM stocks for complexity. Reserve wines aged up to 4 years. Wine is then bottled to undergo 2nd fermentation, then it matures in the cellar for 3 years. Dosage of still wines (some aged for at least two years in stainless steel vats) with 10 g/l sugar to enhance Cordon Rouge's character.
